Kurume Damascus kitchen knife - Chef/Blue
A well crafted kitchen knife at an amazing price! This knife has an interesting handle. The material structure alternates multiple layers of different types of steel. These layers are joined together using a forge welding method to form a single unit (67 layers for this knife). When using, please note that the knife is very sharp and is used for cutting food. We recommend that you wash, dry and put the knife away immediately after use. The advantages of the knives in this range are their extraordinary sharpness and hardness (HRC60±2)
Damascene steel is produced by repeatedly forging, folding and re-forging several strips of steel with different properties, thus creating a characteristic pattern that has tens to hundreds of layers. Damascene steel is sharp and durable in the long term due to the grouping of materials with different properties.
The core of the steel is one of the best rated steels, VG-10. Highly abrasion resistant stainless steel.
V Gold 10 steel is commonly known as VG-10 or sometimes V-Kin-10 (kin is short for "gold" in Japanese). VG-10 is a unique formulation of high carbon steel containing chromium, vanadium, molybdenum and cobalt. The steel is specifically designed for the highest quality knives used both in the kitchen and in the field. VG-10 is often called "super steel" because it is designed to retain its sharpness and durability without becoming brittle. Most commonly used in the manufacture of damascus knives. When steel is used as the core and is stacked with another type of steel, the best knife properties are achieved when the combination of the two steels makes them strong, hard, sufficiently flexible and corrosion resistant at the same time.
